Black Bean Brownies

A delicious treat, a fun lunch box snack, or a way to get more legumes into your kids day. What ever your reason, this one is a winner!

Ingredients

100g coconut oil

4 tablespoons cacao

1 can organic black beans, drained and washed

80g coconut sugar

3 eggs

1 teaspoon baking powder

Method

  1. Preheat oven at 160 degrees approx

  2. Melt oil and cocoa together

  3. Combine oil & cocao mix with black beans and blitz well in a food processor, ninja bullet or thermomixer until relatively smooth

  4. Add eggs and coconut sugar, mix.

  5. Stir through baking powder

  6. Line baking tin, and bake for approx half hour or until cooked through

  7. Enjoy!

Optional:

  • walnuts or other nuts stirred through before baking
